#CookBlogShare Week #20

When I was preparing this post I looked at my own recipes and realised with alarm that so far I’ve only shared 1 healthy cupcake recipe – pumpkin spice cupcakes with cream cheese frosting.

Such an oversight, but I am determined to fix it.  Soon.  Especially after seeing the fantastic cupcake recipes shared last week.

I do, however, make muffins (not quite in the cupcake category but close😊).  They are usually of the ‘sweet’ variety though my recent muffin recipe is savoury.  I made super light and fluffy, no added sugar cauliflower muffins with nutritious kefir, a moderate amount of cheese and chives for extra flavour.  It’s amazing what you can do with cauliflower rice!

Back to cupcakes!

Cupcakes are versatile and decorative they make a fantastic addition to any celebration.  You can mix and match and dress them up any way you like which is what our 3 featured bloggers have done with their cupcakes.  These cupcakes are all super gorgeous though very different from one another.  I am sure you’ll love them!

RHUBARB & STRAWBERRY MERINGUE CUPCAKES

Jacqui from Only Crumbs Remain shared her delicious Rhubarb & Strawberry Meringue Cupcakes, which for me are perfect to make for a special occasion.  They look stunning with the perfectly crisped up meringue on top.  The filling consists of a zesty rhubarb and strawberry curd (made completely from scratch!) which sounds delicious paired with the sweet meringue.  Jacqui has included helpful tips on making the perfect Italian meringue so you’ll have no trouble producing gorgeous looking meringue cupcakes!

VANILLA CUPCAKES

Cat from Curly’s Cooking shared a super quick and easy Vanilla Cupcakes recipe that comes together in less than 30 minutes!  I think that’s pretty fantastic for a recipe that’s made from scratch!  Cat’s vanilla cupcakes are deliciously light and fluffy and topped with a 3-ingredient indulgent buttercream.  They are also super adaptable and fit for any occasion.

JAMMIE DODGER CUPCAKES

Another cupcake recipe last week came from The Baking Explorer.  Kat’s Jammie Dodger Cupcakes contain a raspberry jam filling, quick and easy buttercream and a jammy dodger biscuit on top.  I love the variety of textures in these delicious cupcakes – from light and fluffy to creamy and crunchy.  Don’t these cupcakes look gorgeous?
