With minimal prep, it makes an easy, budget-friendly dish, perfect for a potluck, family dinner, or cookout.

What do you need to make a great salad? Not much, really. Start by chopping the following ingredients:

  • 1/2 head of cabbage
  • 1 cucumber
  • 6-8 green onions

Next, combine 1/4 cup olive oil with the juice of 1 lemon, 1/8 cup fresh dill, 2 tsp white wine vinegar and a dash of salt/pepper.

In a large bowl, mix together the chopped vegetables and dressing. Add additional salt and pepper, if desired.

This cucumber salad tastes better when chilled. I like to place it in the fridge for at least one hour before serving.

Light & Fresh Cucumber-Cabbage Salad

Ingredients

  • 1/2 head of cabbage chopped
  • 1 cucumber chopped
  • 6-8 green onions chopped
  • 1/4 cup olive oil
  • 1 lemon

Instructions

  • Start by chopping the following: cabbage, cucumber, green onions.

  • Next, combine olive oil with the juice of 1 lemon, fresh dill, white wine vinegar and a dash of salt/pepper.

  • In a large bowl, mix together the chopped vegetables and dressing. Add additional salt and pepper, if desired. Store in refrigerator for at least an hour.
