I love the crunchy texture and salty balance of flavors in this salad.
Celery contains many minerals that help keep the body in balance and provide energy to the cells. Herbs are high in minerals and the cilantro is a great remover of heavy metals. Olives are highly alkaline and contain good fats.
The lemon adds great flavor and helps digest the greens and fats. Avocados are alkaline and contain healthy fats.
Ingredients for Celery, Herb & Olive Salad
celery, chopped (1 large bunch)
fresh herbs, chopped (lg handful – I like cilantro and parsley especially)
lemon juice (1 lemon – can add zest too)
raw kalamata olives, pits removed, chopped (12 large)
Some raw olives are brine cured, some rolled in salt and dry cured, and some are sun dried without salt. Choose what works best for you, but I will say the sun cured olives are fantastic.
Mix all ingredients in a large bowl and enjoy! This will serve several people as a side salad, or one hungry person as a whole meal.
