1 lb. boneless, skinless chicken breast
1 yellow onion, reduce into wedges

1 orange or red bell pepper, reduce into 1 inch chunks
1 tsp. ground cumin
1 tsp. dried oregano
three cups organic chicken broth

1/four cup unsweetened almond milk (can also use half &amp half)
Frank&#8217s hot sauce, to taste
salt and pepper, to taste
toppings of selection such as: sliced avocado, sour cream, minced cilantro, toasted pumpkin seeds

Location chicken in the bottom of crock pot. Best with onion, garlic, canned chiles, peppers, cumin, oregano and broth. Cover and set on low for eight hours.

Right after eight hours, shredded meat with two forks. Leave in crock pot with broth, adding cream cheese and almond milk. Stir till blended. Cover and place on higher for 15 minutes. Season to taste with salt and pepper. At this point you can also add hot sauce to the complete batch or reserve to season person portions.

Serve garnished with your selection of toppings.
